Why you want to visit the circular Restaurant R Amsterdam

Restaurant R is the very first circular restaurant in our capital. French circular gastronomy takes the spotlight at this pop-up restaurant, located in The Manor. Sustainability is the common thread here. And what does that entail? It means that (almost) nothing is wasted and the ingredients are sustainable. Additionally, they work with products that some food producers would already discard, but at R, they know how to make use of them. Did you know that over a third of all food produced worldwide is wasted? The chefs at this new establishment find this wasteful, and their work proves there is still much to make from it. Without knowing the story, one would have no idea that they work with ‘almost discarded’ food.

The name ‘Restaurant R’ is inspired by the R-model of circularity. There are indeed many ‘R’s’ and rules that the restaurant must adhere to to work circularly and sustainably. The R stands for refuse, reduce, rethink, re-use, repurpose, repair, remanufacture, recycle, and recover. In short, these terms mean that a circular way of cooking rejects or reduces some (non-sustainable) products, works more brilliantly with what is available, extends the shelf life of products, and prevents waste by using ingredients as efficiently and effectively as possible.

Menu Restaurant R

On the menu of Restaurant R Amsterdam, you’ll find exceptional dishes inspired by classical French gastronomy. With a focus on plant-based ingredients, several dishes are suitable for vegetarians and vegans. But there’s also plenty of choice for meat and fish lovers. The fresh mushroom broth with ‘caviar’ of citrus fruits and poached cod-garlic fudge is already a hit, as is the sea bass ceviche and smoked ribeye. You can dine à la carte or opt for the chef’s menu, which consists of four, six, or eight courses.

For those with a smaller appetite, there are also artisanal bar snacks, which you can enjoy in a relaxed atmosphere with a local beer.

The Manor

Restaurant R is in The Manor, a luxury hotel housed in an old hospital building on Linnaeusstraat. The building opened in 1891 as Amsterdam’s first ‘civilian hospital’. And that’s not all; on April 25, 1947, Johan Cruijff was born there. In short, it’s a place with a rich history, where history continues to be made even today.
